My Favorite Chicken Salad. in Food.

I roast an entire chicken once a week. It's ridiculously easy and a great way to stretch money and still eat WELL.

We buy a whole roaster chicken, usually at Walmart (so shoot me, it's not organic) for about $7 for a little over a 6lb chicken. I rub it with oil or butter (dairy free butter spread) and use salt, pepper, garlic, and whatever else I feel like that day and stick it in the oven for however long it takes to be done, usually an hour and a half. That night, we have chicken and sides.

The next morning, I take ALL the chicken off the bones and keep a big bowl of chicken meat. I take all the bones, skin, cartilage and whatever's left and stick it in my crockpot for perpetual chicken bone broth (it simmers 24 hours a day for 7 days -- you take some as you need it, whether it be to drink it daily for immune health, to cook with, etc).

Then I make soups, stews, chilis, etc from the meat. And once a week, I make a big homemade chicken pot pie. And last but not least, for lunches, my very very favorite chicken salad.

Chicken Salad

Whatever chicken I have left/can spare from other meals, at least a cup or two. Peeled and chopped apples ( 1 or 2) Chopped celery (to your taste) Salt, pepper, thyme, powdered mustard Mayonnaise

It's absolutely amazing. On bread, wraps, or in a bowl by itself :p
