I've been on the hunt for GFDF snacks for myself, Josh, and the kids. I don't want to have to buy separate snacks for all of us.
When I was eating Paleo - which I LOVED and lost weight on but it was STRICT and time consuming and MONEY CONSUMING, even moreso than this is. You were told to STAY AWAY FROM ALL BEANS/LEGUMES. So i'm in the mindset of BEANS ARE BAD.
But, now that the kids are GFDF there's not a LOT of options. I mean, I can go buy all of the GF special stuff, and they do like the chips/crackers/pretzels, etc.
But I've been making beans. My favorite right now is sprouted & roasted spicy chickpeas. I soak them overnight in water, then drain and rinse. Then I leave in a colander and covered with a tea towel and rinse every few hours for a few days. I wait until the sprout is the length I like (I like it long!) and then I roast. I put in a bowl and toss with coconut oil, cumin, salt, chili powder, and red pepper and roast until CRUNCHY.
