Fairness in Musings and Misgivings

Fair means that everyone gets what they need. It was something that was belted into my head in my early intervention classes in college. There is almost no such thing as fair in this world anymore. We are on our own.

There are so many people out there suffering from issues that are preventable and easily solved watching billionaires flaunting every inch of their excessive wealth in obscene displays that scream, “Let them eat cake.” Whew! what a run on sentence! My apologies.

I was in a back and forth messaging thread with my best friend, D. We were talking about finances. She and her live in boyfriend both have jobs. They live in Louisville, Kentucky in a one bedroom apartment. She has one full time job and multiple other streams of income, including eBay and Poshmark, she is starting a bakery stand, and also sells her art and crafts. Her boyfriend is a cheesemonger at a supermarket.

They aren’t making it. Neither can afford car insurance, and neither has health coverage. She NEEDS to see a doctor, but cannot afford it.

A lot of us are in similar situations right now. Barely, or not, getting by. We would not be eating if not for our local pantry.

My bff and I were discussing how we stretch everything we use and have. How we try so very hard to reduce food waste. I told her I have learned how to stretch one onion between FOUR different meals. I have stopped making side dishes most nights. I don’t load a recipe down with extra additions like I used to. I think I have simplified most things. Cut things back to bare bones.

But I try to make everything as good as it can be. Nothing to snack on? Make something. I discovered that I can make REALLY yummy tortilla chips with all sorts of cool flavors. Last week, I made chips with Everything But the Elote seasoning from Trader Joe’s. Rick and I both agreed that it was SO tasty. Better than store bought. I apologized for the chips being a little darker than what we’re used to. But the chips being dark was the only way to ensure crispiness.

I have learned how to make just about anything I might want. If there’s something I don’t know, I welcome the opportunity to learn. I am seeing more people who are also learning to make things we can’t afford to purchase from the store anymore.

This weekend, I am hoping to make mayonnaise, banana bread, tuna and egg salad, baked potatoes, maybe a Tex Mex macaroni salad with fresh corn and black beans.

Last night, I made fish tacos with frozen fish sticks, shredded cabbage, and a sauce with ranch and taco sauce. It was SO good.

Rick worked at Disney Studios yesterday. He got home around 3. We hung out and had dinner. Around 9:30, he had to drive to LAX airport to pick his son up. Bix is home from college for the summer. Rick is excited to have his boy home for a bit. I hope they have time to hang out a lot before he has to go back.

I will likely be spending a lot of time home. But anything they might want to do would probably be too physical for me. Because we are quite literally overdrafted, they will likely spend a lot of time hiking.

I let Rick sleep in, and am hoping we can do our own thing today. I just have one order to ship out, and other than that, I don’t have anything I have to do.
