Cheap meal ideas in Bittersweet

I need some cheap meal ideas. We feed 8, so anything that is cheap dosent really feel cheap ugh.
I got a pack of chicken, sketti sauce, plenty of noodles. Eggs although i dont eat many because i get a headache after eating store bought eggs ( but fresh im generally ok with....) Bread ( ugh) The only thing we splurge on is soda. And only because its 87 cents for a 2 liter at walmart. I skipped fresh foods this paycheck, so we are going to live on canned goods haha.
At least i have some chicken and steak ( leftovers) in the freezer. I freeze all my leftovers to use in the future. I like to make steak soup. Which is beef stew but because we BBQ our steaks, it gives it this smokey earthy flavor. I call it steak soup instead haha. Kids know the difference. I do have some burger, but its the last im going to have, Its 4 dollars a lb! Thats so expensive. Chicken was a dollar something a lb. Ugh i hate when money goes tight haha. The husband is all, you cant spend a thousand dollars on food this month. Me… Wut.... I normally spend 1200. So uh… wut..... haha. I mean we have a tiny bit of supplies/staples now. Seeing we have been in the house like 2 months. But its no where NEAR what i like to keep on hand. We wont starve. We can survive off of pancake batter if we need to lol. But it wont come to that. Just cant splurge on the things i normally do. Normally i spend a good 500 dollars on fresh produce a month. I bought bok choy, carrots and potatoes. Bok choy goes in all my soups and stews. Has no flavor but nutrients. Ive got a leek and a bunch of green onions regrowing in the window doing awesome. I harvested the bit of plants that i had outside, got like 6 peppers ( green and orange) And i can harvest my herb garden too. Got TONS of mint… Some dill, sage, rosemary, thyme. Problem is, i dont have the glass jars to store it! So its like crap, I can dry it all out but how can i store it. Im not sure how it will last in plastic baggies. Ill be saving my sauce jars. So thats two haha. Maybe the mint can fit.

Anyway, just rambling. I need to think of some verity in meals at least. Im super picky so i prob wont even eat it. But the kids would.

We do a lot of hotdish recipes here in MN. Those are cheap and can feed many. Tater tot hotdish, sloppy Joe hotdish, etc.

Tater tot hotdish: brown hamburger and onion, put in a baking dish wish mixed veggies, cream of chicken or cream of mushrooms, I usually use 2 cans, top with tater tots and bake until tots are browned and bubbly.

Sloppy Joe hotdish: brown hamburger and onion, place in a baking dish with cooked rice, corn, and a jar of sloppy joe sauce. Mix well and bake until bubbly. Can add some cheese to the top if you'd like cheese. They are fast, easy and good. Relatively cheap. We had a house of four so with 8, you may need to double up the recipe.

I do it with leftovers haha. I like using leftovers haha. Pork almost always becomes fried rice. Beef ends up stews or pie or something mixed haha. Even left over chicken can be fajitas or pie or soup. Stir frys.
Im making chicken thighs with cream and herb sauce for dinner tonight. Rice based dishes stretch best for us.

Rice is like my cheap go to. And we buy jasmine, so its a bit more expensive then long grain. But we like the flavor better.

Oh really? I found it at walmart!
My kids were scared haha. But we do plain rice with purple cabbage sometimes and it colors it too. I made purple mashed potatoes once. and that was also their what the heck mom faces.

Groceries have gone up here . I swear I went to Walmart today and bought five bags of miscellaneous stuff ; not much food and no meat . I spent $150.00 . I need to go back tomorrow with my grocery list ; then also go to another place to buy meat ;-( . I keep thinking I should be stockpiling some food things because of the virus and the election , but it seems like I am already spending a lot just getting by day to day. There is only three people here but we have four dogs ( 2 big, 2 small ) , two cats , four birds , and misc fish :-) .

I was trying to think of cheap meals ; chicken and noodles , chicken soup , stir fry , goulash , chili , spaghetti , mac and cheese , grilled cheese sandwiches, dressed up ramen( add shredded vegetables) , Bruschetta ( add toppings as desired), BLTs , chicken and rice casserole, tuna casserole , hamburger vegetable soup ,Tomato soup , cold cut sandwiches and chips , hash ( left over beef, carrots, potatoes, onions fried ), dried beef on toast ( SOS ), omelettes or skillet fried Denver eggs ( eggs, ham, peppers, onions , mushrooms diced and fried together)or just fried egg sandwiches on toast. Then my mind goes blank :-)
