2:40 AM and I’m reading The Farside comics. Love Gary Larson’s strange sense of humor.
I made eggplant parmesan tonight with homemade sauce. This time I added another tomato and clove of garlic. It turned out really good. The eggplant fried up nice with the panko crumbs. I have a good bit of sauce left over. Almost tempted to make a pizza in the next few days. 🤔 Hrm
Most of the day has been spent gaming. Switched between Mortal Kombat at that Sega collection I have for the PS3. It was nice to turn the brain off for a little bit and play some platformers and fighters. I needed the time to unwind.
It was a very busy week and looks like this one is shaping up to be the same.
At least it’ll be warm.
