The Beverly Hillbillies are on.
This show is silly but it makes me laugh.
Earlier tonight I tried my hand at homemade tomato sauce. I used five tomatoes to make the sauce but probably could’ve used seven. Two cloves of garlic and half a large onion. Half mild Italian sausage and half 80/20 ground chuck. It turned out well but as the tomatoes cooked down I realized it’d be a small yield. Oh well, it was good and I have some leftover for tomorrow.
Mom fell tonight. She trips on the tiniest things. She refused my help and crawled to the couch. Anytime she needs to get up now I have to assist her. This is getting tough. At least she liked the spaghetti. I’m not complaining but she keeps trying to get up and do things. I’ve threatened to call my brothers and the wives if she gives me any crap about helping her. If she won’t listen to me when it comes to her health then I think four other dissenting voices might make her listen.
President’s Day tomorrow (today)
Most everything will be closed.
We got some groceries this evening and bills have been paid, sleeping in will feel nice. That is if I don’t wake up at like dawn again.
Currently reading: Basket Case by Carl Hiaasen
Pretty good so far. Obituary writer investigating the death of a former rockstar. He presumes foul play.
I got a pack of those single roast cigars I like. They don’t taste quite as good (or smoke quite as good) as Havana Honeys. I switched to HH when the others were on back order. Guess I found something I like better.
My legs feel sore tonight what with all the physical stuff I’ve done this weekend and cold weather. There are a few dishes left in the sink and some towels to wash in the bathroom but after making dinner (and the cleanup while cooking) I hit my limit. I just wanted to sit and relax. I’ll get them later.
Hour later…
If anyone is interested…
5 to 7 tomatoes
1 onion
2 - 3 cloves of garlic
1 lb of Italian sausage or ground beef
Salt and pepper to taste
Put the tomatoes in hot water for five minutes to loosen the skin.
Core the tomatoes, peel the skin and cut into chunks. Set aside for later.
Slice and dice the onion. Finely dice the garlic.
Cook the beef/pork mixture and set on a paper toweled plate to drain.
In a large pot, heat two table spoons of oil. Add the onions and garlic once heated up. Simmer/stir for a few moments over medium high heat until aromatic or the onions get translucent.
Add the chunked tomatoes and cook for twenty minutes. I (since I don’t have an immersion blender) blended it all together and added back to the pot. Add salt and pepper to taste.
Add the meat, stir well and simmer another five minutes.
Serve with spaghetti noodles and garlic bread.
It’s a very basic recipe. If you like basil, oregano or other spices then feel free to add them. Tonight was just an experiment. I also added some diced mushrooms after I blended everything as I had some leftover from another dish I had made. All in all it turned out really well. I’m tempted to go heat up some now. LOL
It’s 2:33 AM.
I haven’t been up this late in a little while. Been sleeping really good. Tonight though I don’t care. We got some groceries to get us through the week, all the financial institutions will be closed in the AM so might as well stay up some. Plus mind is restless about Mom’s health and finances. Can I just put her in a body cast or a suit of power armor like in Fallout?
That’d be bad ass…give her an automatic plasma rifle and let her go nuts. Ha!
I need to attempt sleep
Minute later…
Okay, what the actual hell?
I’m kicking back watching Man Vs Food and the cable decides to go out.
I’ve slept with a TV on for so long I can’t sleep without it.
Fuck....
