Dear Friend,

Hey, hey, I miss you. Don’t you know it? I should just give up trying to find someone to “replace” you. I know that’s impossible but I keep wondering, maybe someone would come close? That just can’t happen. I shouldn’t try anymore. If I try and they don’t meet my expectation, and I get down and disappointed, and it’s not at all their fault, but I get them down as well. It’s so unfair.

I’ve never trusted anyone with my whole self, anyone but you. I don’t think I’m at all depressed or cynical. I think I’m happy most of the time. Still, I don’t feel like anyone gets me.

These days I’m very happy. This is the happiest I have ever been in my life. I’m quite sure about that. How did I live through all that suffering? That was scary to think about. But it’s ok now. I don’t understand. The things from our past which we look back at shudder at, how have we got through them in the first place?

I’m so happy that I don’t even need to journal anymore.

Someday I’ll make you proud and start dating.

I wish, for as long as I live (and I do believe in afterlife, but I know this life better, right now), that I’ll remember you and wish you well.

Egg and Breadcrumb Patties

Make these Egg and Breadcrumb Patties with your leftover breadcrumbs! It is so easy to make, it is my favourite way to use up your chicken breading.
Ingredients

1/4 cup breadcrumbs
1/4 cup Parmesan cheese
3 large eggs
2 Tbsp oil

Instructions

In a small bowl, mix together all of the ingredients except the oil.

Heat the oil on a medium skillet. Scoop 1/4 cup mixture and cook on one side for around 2 minutes or until browned. Flip and cook the other side for around 2 minutes, or until brown. Repeat for the remaining batter.

Recipe Notes

You can replace the breadcrumbs and Parmesan with your leftover breading from your meat recipes.
