Good evening everyone. I have been playing around with my bread machine lately. Once I got the hang of making pizza dough, I thought I would try something else.

Don’t mind their appearance, it is still delicious. Bagel dough is an interesting medium to work with. It sits somewhere between pizza dough and a feather pillow. I’ll get the hang of it soon.
You will need:
3 cups flour
1 cup warm water
1 1/2 tsp sugar
1 tsp salt
1 tsp yeast
1 egg for wash
1 tbsp butter for wash
- In this order add water, sugar, salt, flour and yeast into bread maker. Do not MIX!
- Set machine to dough, and wait.
- When finished, set dough on a lightly floured surface, and form into a ball. Using a pizza cutter or similar, cut the dough into 8 equal pieces. I cut in half, then into quarters…etc. They will look small, but when finished they will be close to average size bagels.
- Roll each piece of dough into a ball, then use fingers and thumbs to press in the center until you have a 1 inch hole. I figured out at the end it is easier to work a thin indent in the center, poke my finger through it, then spin it like a hoola hoop. I couldn’t go back to fix the others because once the bagels have been shaped, the dough isn’t malleable enough to be reformed. At least I thought so, if you can pull it off, then more power to you.
- Place each on a lightly greased baking sheet, and brush the tops with slightly melted butter.
- Allow to rise again, covered with a paper towel for 30 minutes.
- Bring 3 quarts water and 2 tbsp sugar to a boil. Then reduce heat.
- Simmer the bagels in the water about 2 minutes on each side. If you can’t fit all of your bagels, do them in batches.
- Set the bagels on paper towels to drain. I used a paper towel lined cookie rack.
- Preheat the oven to 400 deg. Put the bagels back on the baking sheet. Do not re-grease it. There should still be plenty still left on it.
- Brush each bagel with a wash made from 1 egg and a tbsp of water.
- Bake for 25-30 minutes, or until bagels are desired goldiness.
