My Attempt At Prezzo Spaghetti with King Prawns in Food Box

Time: 10 – 15 minutes from start to finish

100g spaghetti or linguine
1 tablespoon olive oil
2-3 garlic cloves, crushed or finely sliced
1 fresh red chilli, finely sliced or chopped
200g chopped tomatoes (half a tin)
Juice of half a lemon (2 tablespoons lemon juice)
150g peeled frozen prawns, defrosted (or fresh) - I use Tesco Chilli and Coriander prawns.
Couple of handfulls of spinach
1 tablespoon fresh parsley or coriander
Salt & pepper to taste
Parmesan to serve.

Cook the spaghetti.
While the spaghetti is cooking make the sauce:
Heat the oil in a large saucepan or wok and add the garlic and chilli. Cook for about a minute then add the lemon juice, and tomatoes. Cook for around 5 minutes over a high heat until the sauce is bubbling and it has reduced slightly. Add the spinach for a couple of minutes until wilted. Finally add the prawns for a minute or so - you just need to heat them through. Season to taste.
When the spaghetti is cooked, drain it and add to the tomato & prawn sauce along with the parsley or coriander. Toss everything together over a low heat until all the spaghetti is well combined with the sauce. Serve immediately with more fresh herbs and parmesan sprinkled on top if you like.
