Sauerkraut balls

1 lb lean sausage,

1/2 lb. Ground chuck,

2 small cans cheap sauerkraut drain and chopped, do not rinse,

1 medium onion chopped fine,

1 cup crackers ground fine,

1teaspoon salt,

1/4 teaspoon garlic salt,

1 teaspoon prepared mustard,

1 tablespoon parsley flakes ground in your hand,

1 tablespoon sugar,

1 egg.

Brown meat and onions till done. Add kraut and stir and let cool about 5 minutes. Add all seasoning stir and let cool 5 mintues more. Add beaten egg and cracker crumbs, stir and place in bowl , cover and place in fridge overnite orat least 8 hours this is very important because they need time to stick together,.now ground more crackers into a fine power, make balls and roll and let set about 5 mintues, then into egg and milk mixture, let set again , now your ready to deep fry 375 , dip balls in crackers just before frying , about four at a time. I know this sound like a lot of work but its really worth it

Use dry mustard you won't even know it's there! LOL
