Deviled Eggs (and pumpkin pie) in Rose and Andrew Cook

Leave 12 eggs out overnight
Put two rounded table spoons of baking soda in water, bring water to a low boil, poke a pin hole in the round end of all 12 eggs, put eggs in, return to light boil, boil 6.5 minutes, remove eggs, run cold water over eggs
Peel the eggs, rinse with cold water as you peel
Cut eggs in half length-wise (try not to cut the thin part, if you can tell), wipe the knife blade off between every egg
Put all the yolks into a bowl by pressing them out with your thumbs
Add about 1/3 cup mayonnaise, 2 tablespoons of mustard, (and two tablespoons of pickle juice if you have it) mix for 5 minutes—if it’s too thick, thin with (pickle juice, or) more mayonnaise (should be about the thickness of mayonnaise)
Add 5 to 6 shakes of pepper, 3-4 shakes of salt, blend
Put into a sandwich bag, cut very small hole in the corner, and squeeze out into eggs—fill egg and go about 1/8 inch over top of egg
Put one pinch of paprika on each egg

The pumpkin pie is just the recipe on the side of the can of Libby’s pumpkin.
