How I Made the Chili in Kitchen Vixen

last night’s chili was particularly tasty. I don’t want to forget it because it was a “clean out the freezer/clean out the cupboard/free-for-all kind of chili.

1 lb ground beef
1/2 lb ground pork
2 mild Italian sausages removed from casings
1 large sweet onion
Salt
Pepper
Cumin
Chili powder
Cinnamon
1 small can mild green chilis
1 can Joan of Arc dark red kidney beans
1 can petite diced tomatoes
Some leftover spaghetti sauce from fridge
About 1 cup ketchup
Worchester Sauce
Dry taco seasoning
1 tablespoon cocoa powder
A little bit of John’s beer

Cooked low and slow for a couple of hours in my heavy Dutch oven

Served over rice
Topped with diced scallions, sour cream and shredded cheddar cheese
