Bread Machine Bagels in Kitchen Witchery

Good evening everyone. I have been playing around with my bread machine lately. Once I got the hang of making pizza dough, I thought I would try something else.

Don’t mind their appearance, it is still delicious. Bagel dough is an interesting medium to work with. It sits somewhere between pizza dough and a feather pillow. I’ll get the hang of it soon.

You will need:
3 cups flour
1 cup warm water
1 1/2 tsp sugar
1 tsp salt
1 tsp yeast
1 egg for wash
1 tbsp butter for wash

  1. In this order add water, sugar, salt, flour and yeast into bread maker. Do not MIX!
  2. Set machine to dough, and wait.
  3. When finished, set dough on a lightly floured surface, and form into a ball. Using a pizza cutter or similar, cut the dough into 8 equal pieces. I cut in half, then into quarters…etc. They will look small, but when finished they will be close to average size bagels.
  4. Roll each piece of dough into a ball, then use fingers and thumbs to press in the center until you have a 1 inch hole. I figured out at the end it is easier to work a thin indent in the center, poke my finger through it, then spin it like a hoola hoop. I couldn’t go back to fix the others because once the bagels have been shaped, the dough isn’t malleable enough to be reformed. At least I thought so, if you can pull it off, then more power to you.
  5. Place each on a lightly greased baking sheet, and brush the tops with slightly melted butter.
  6. Allow to rise again, covered with a paper towel for 30 minutes.
  7. Bring 3 quarts water and 2 tbsp sugar to a boil. Then reduce heat.
  8. Simmer the bagels in the water about 2 minutes on each side. If you can’t fit all of your bagels, do them in batches.
  9. Set the bagels on paper towels to drain. I used a paper towel lined cookie rack.
  10. Preheat the oven to 400 deg. Put the bagels back on the baking sheet. Do not re-grease it. There should still be plenty still left on it.
  11. Brush each bagel with a wash made from 1 egg and a tbsp of water.
  12. Bake for 25-30 minutes, or until bagels are desired goldiness.
