Barbuda food in In the Kingdom of Suzu

We had some tasty meals during our stay. Uncle roddy made tasty food too but it was pretty much the same and very simple. Lobster, fish, chicken always grilled, salad with bottled Italian or French dressing, rice and beans and plantains. Sometimes if we requested and he could get it, it would be goat, venison or conch and they were always stewed. Like I said, good but after a couple days of basically the same thing, I wanted a change and that is probably why I was a fan of the street food. Street food also was grilled, but they used spices or had jerk chicken, had different sides like mac and cheese, johnny cakes, mashed potatoes and of course rice and beans!

This time we had pumpkin soup, shark burgers, chicken roti, fish and chips, burgers, lobster creole, pork tenderloin stuffed with cream cheese and spinach, lobster bisque (Jeff and I love that and are always on the hunt for the best, this was the best we have ever had), conch chowder, conch stew, fish and chips, surf and turf, conch bruschetta, lobster bruschetta, seafood pasta with alfredo sauce, roast chicken, jerk chicken, fish with mango salsa, all delicious. The chef that kelcina got is a very talented gentleman because not only was the food delicious but it was presented well. I ordered surf and turf and when it came I didn’t see the turf right away but then I looked again and he took the turf, cut it in strips and then put it in a circle and took pieces of the lobster and centered them in the middle of the meat. It was melt in your mouth delicious. We did some lunches and dinners and a few times we just snacked or made something that we brought from home. We always bring down crackers, cheese, nuts, breakfast stuff, coffee, Jeff brought down a rice mix and some andouille sausage so he made that up one night.

We also went to a benefit one night as it was “nurse appreciation week”. Kelcina had gotten us tickets and we went. Standard awards type of thing because one of the speakers droned on and on but the food was good. Of course there was rice and beans, chicken and fish but they also had two kinds of lobster salad, one hot and one cold which I really liked, salad, mac and cheese, something that they called chop suey (not sure how that came about), fruit, beverages. It was quite the interesting night as when we got there, the place was all dark and we only saw a couple of cars. We go in and find out that there was a power outage! Kelcina has solar power at the cottages so we weren’t aware of it. Of course, they had no generator and it was getting hot! Finally, the power came on but it put everything back by about an hour. It was supposed to start at 7 but didn’t get started til about 8. We didn’t get to eat until well after 9 cuz they did the speeches first. They were having dancing after everything but we left before that because it was close to 10 and we were pretty beat by then (especially when you are waking up at 5 cuz it gets so light out).

Now we are home, the weather has been crappy and I wish I was back on Barbuda eating the delicious meals that Lennox, the chef, made for us. Hope he is still there the next time we go back.

Should also add that we give a list of what we want and then kelcina will get it for us such as eggs, water, beer, onions, peppers, juice, cream, butter, etc. I have noticed last year and this that she comps us for those things except for the beer, which is really nice. I think she does that cuz we are repeat guests but also because we are friends and we don’t really ask for much in the way of staples. We used to have her get us other alcohol but she gets it from the duty-free shop at the airport and so we just get our own before we get on the little plane. In fact, this time, she asked us to get her a bottle of something that she needed! She also will host us a dinner at her cottage which is very thoughtful of her. We will bring down wine, cheese, crackers and make a real party of it. I miss her already.

Oh my! What wonderful foods! You certainly did eat well. It sounds like you had a really great time. It makes a big difference I think to know you are thought of as friends, not just tourists. How many times in all would you say you've been to Barbuda?

How lucky you are to have gone to Barbuda 4 times! I'm lucky to have been to Hawaii 1 time. I will probably never go back.
