A Salem Favorite
Chop celery and onions. Cover with water along with salt, pepper and stick of butter. Bring to boil then simmer till tender. Either I’ve boiled the chicken previous or it’s left over. Cut that up while simmering celery/onions. Add chicken and two drained cans of bean sprouts. Mix 1/3 cup cold water, two tbsp, sugar, three tbsp. soy sauce and 4 tbsp. corn starch. Bring chop suey back to a boil. add above to thicken.

Volia…chicken chop suey. This is from memory and I mostly make it by looks, feel. I use two stalks of celery and a large onion. This started as a “Hamburger Chop Suey” that I just did chicken one night and it’s a family favorite now!!
