

Ingredients:
Extra firm tofu
Flour tortillas
Refried black beans
Taco sauce
Green enchilada sauce
Nonfat shredded cheddar cheese
Nonfat sour cream
Avocado
Dry tofu off with paper towels and cut into strips.
Cut each strip into cubes, pressing the cubes between a towel before tossing them into a bowl. Goal: to suck as much of the liquid out of them as possible.
Sprinkled the tofu cubes with turmeric seasoning and fry in olive oil until brown.
Preheat oven to 350 degrees.
Heat refried black beans on stove and blend in taco sauce.
Spread black-bean-taco-sauce across center of four tortillas.
Sprinkle tofu cubes over black-bean-taco-sauce.
Wrap up tortillas like burritos and lie side by side in a square baking pan.
Cover burritos with green enchilada sauce.
Cover that with nonfat shredded cheddar cheese.
Bake for 30 minutes.
Top with nonfat sour cream and avocado.
