I managed to work on the reselling stuff yesterday, in spite of it being my chemo meds day. To my benefit, I was sitting in a comfy chair. I worked until I was too tired to continue. I tried laying down, but the cats were not in the mood to allow me to rest.
Rick was only gone a few hours. Just long enough to go home, pay the rent, grab a few things, and then drive home.
I knew I had to cook up the five pounds of chicken legs and thighs we had defrosted. I was tired, but I also wanted something comforting and warm. I looked up recipes using canned tomato soup and the first post that popped up was Campbell’s tomato soup butter chicken! WHAT IN TARNATION?! I read through the recipe, and decided to adapt it based on what we have on hand.
I don’t have fresh produce here. No onion. No garlic. Only canned veggies. Carrots and green beans. I also had a can of lentils. I knew K wouldn’t mind if I took a couple of cans from his endless stash, so I grabbed a small can of unsweetened coconut cream, a microwaveable packet of brown rice. I also saw a jar of red curry powder.
Dinner sorted! I poached the chicken in salted water until tender and cooked through. While that was cooking I cooked a 1/4 cup of tomato paste, the coconut cream, and 3 tablespoons of red curry powder and let it cook together for three minutes before adding the tomato soup, 1 cup of water. Let it bubble away for a bit. Added in one chopped potato (already baked, leftover from dinner), and then added the drained carrots and green beans. Once the chicken was cooked, I pulled the meat from four thighs. I shredded it and put it in the sauce and let it warm through. I cooked the rice packet and added that.
We served it with toasted German Rye bread. I decided to call it Trash Can Red Curry Chicken Stew. It was spicy. The kind of spicy you cannot stop eating. Rick gobbled it up.
We watched a movie called, “Sew Torn” last night. Purposely went in COMPLETELY blind. Really fun movie. Again, visually captivating.
