Just putting this here as a little reminder of my to do list for what I’d like to accomplish this weekend. We were supposed to go see Rick’s friend’s play, but Rick expressed a desire for a quiet, productive weekend, so that is what he shall get. I have zero expectation that the entire list will be finished off, but I will be glad about each thing I do manage to mark off the list.

So on the food prep and cooking front that I would like to make between today and Sunday:
- Turnip greens and chickpea sauté with a little veggie broth and red pepper flakes
- Potato salad devilled egg style
- Mediterranean macaroni salad with a yogurt dill Tzatziki style dressing
- Yogurt parfaits with fresh strawberries and raspberries, and either a little honey, or pepper jelly as a mix in, as we are using plain Greek yogurt. We have granola for a topping.
-Stuffed poblano peppers using the leftover chicken cacciatore and white rice (this will be prepped and put into the freezer.)
- Carrot and celery sticks for snacking
-A bean dip using great Northern beans
-Roasted chinese eggplant and carrots
- Chinese style ground pork and rice. I use ground breakfast sausage, hoisin sauce, garlic, Chinese five spice powder and thinly sliced green onions. It is sumptuous.

On the home front I would like to accomplish:

  • Cleaning and organizing my desk so I can add this very cool wood shelf/riser with compartments and drawers to the top of it. It will house all of my reselling accoutrements like packing tape, thank you notes, lint shaver, etc. This will also get my thermal label printer and desk lamp out of my way and give me more clear flat space to work with. I am really excited about this. And we found it on the sidewalk outside the community space where we see our weekly comedy show!

-Laundry. One hamper jammed full, and I don’t want a second, so time to get ahead of it.
-Get my reselling inventory more organized and not being contained in contractor bags on my office area floor.
-Clean out the fridge and wash all reusable containers with outdated leftovers.

On the creative front, I have promised Rick and my therapist that I will attempt to do something art related so…

-Prep a canvas with a background color and plan out what I am going to paint. I have SEVEN blank canvases to work with!
-Look through magazines I have collected for junk journal/collage material
-Finish the cookbook for Zoe and mail it out TOMORROW

It LOOKS insurmountable, but I find great joy in looking at the items I DO manage to get crossed off the list.
