Day 21 - Of Butternut Squash in These Foolish Things

Oh, the comments about how to fix, cut, roast, and enjoy butternut squash! THANK YOU! I wasn’t even going to mention the tidbit about my soup because I thought perhaps it was a boring read, but then I remembered that this is my diary and I’m writing about it for me, and that soup during cold weather brings me JOY. So I wrote about it, and I’m so glad I did. Because your tips not only saved me time and energy, but they made my meal better!

We truly are a village here on Prosebox, aren’t we?

And I thought of all of you while I was happily warming my belly with hot butternut squash soup last night. And because I’m single, I now have six more EXTRA-LARGE helpings to enjoy later. I froze three bowls full and will eat three more servings this week.

Now I’m going to try my hand at making some fancy tuna patties tonight. Any tips? Haha. This has turned into a cooking journal.

But not really. I guess this is all because I am finally feeling the nesting instinct - at 57 years old! I have never loved cooking before and now I’m excited about making stuff… making healthy stuff that actually tastes good!

Now, don’t get me wrong, I have a LOT of perfecting to do, but I’m loving making food lately.

If you looked at my fridge six or seven years ago, all you would see would be bottles and bottles of champagne, some milk or creamer for my coffee, maybe some pickles and condiments, some ready-made stuff (frozen pizzas and whatnot), and restaurant leftovers. IF THAT! In fact, many times, there’d be NOTHING in my fridge! There were times when I was only going out to eat for pretty much every meal!

Granted, there were also times when I’d have dates lined up for every meal: coffee dates, lunch dates, and then dinner dates. I’m not even kidding. HOW did I do that? Nowadays, I can’t get a date for a walk in the park!

Okay, need to get going, lots of catching up to do at work since we had yesterday off and I slacked off hard on Friday (went to fancy dinner with my friend Diane…NOT a date!).

OH! Speaking of girlfriends and not dating, it looks like I’ve started a brunch club, starting February 15th! A Galentines Jazz Brunch! More on that to come…
