This is attempt one. I adore apple fritters but i dont want to go through the mess of frying them. I used to fry donuts all the time as a kid, just donut holes or funnel cakes. Super easy. But i didnt want to go through that trouble so i tried a baked recipe.

Ingredients
1 1/2 cups all-purpose flour, sifted

1/2 cup packed light brown sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 pinch salt

6 tablespoons cold unsalted butter

1/2 cup whole milk

1 large egg

1 teaspoon vanilla extract

1 cup chopped Honeycrisp apple

1 cup confectioners’ sugar

2 tablespoons whole milk

1 teaspoon vanilla extract

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

Whisk together all-purpose flour, brown sugar, baking powder, cinnamon, nutmeg, and salt in a large bowl. Cut in butter with a pastry blender until mixture resembles coarse crumbs.

Whisk milk, egg, and vanilla extract together in a cup. Stir into flour mixture just until combined; stir in chopped apple. Use a scoop or spoon to drop 1/4-cup mounds onto prepared baking sheet.

Bake in the preheated oven until a skewer inserted near the center of fritter comes out clean, 11 to 12 minutes. Remove to a wire rack.

Mix 1 cup sugar, 2 tablespoons milk and vanilla, Drizzle over warm fritters.

Ok so notes on this recipe.
This makes almost like a scone which is fine.

The spices being “so well mixed” makes the breading more evenly flavored. I would like to next time do an additional batch of spices and “swirl” them through the dough before baking.
The breading kinda burned on the bottom of the pan. Made me bummed out, next time ill try a lower temp for slightly longer cook time. I doubled so i cooked for about 15 minutes to get the tops cooked.

Finely chop the apples. I did chunks, Not as good, and my apples were slightly flavorless. Dang season. So that bummed me out. Even a can of tinned apples would work good in here, just offset the moisture with flour.
