This isn't really a "recipe" but it's still an awesome way to sneak veggies into your kids. ;) I just made it for lunch and am still eating some -- it's GOOD!
I had an old (not rotten, just not fresh) eggplant in my fridge. I needed to use it up. I also have bowls of garden veggies on the counter causing fruit flies that i need to use up ASAP.
I peeled and cubed the eggplant and spread it in a baking dish. Then i cut up some tomatoes (i happened to have plum tomatoes -- lots of them) and laid them on top. Drizzled some oil (any kind is good -- i prefer coconut or olive but all i had right now was vegetable) and salt. Threw in the oven on 400 degrees and kept an eye on it. I usually roast my veggies for almost an hour, but these i took out after about 45 minutes.
Then this is the super easy part. I made a box of mac and cheese. I had a box of Annie's shells with cheddar on hand, although most times i don't if we can't afford it. I made it with 2% milk and made the sauce a little extra saucy. Then i threw in all of the roasted veggies and mixed it really well.
It's really, REALLY good.
