Make What You Have. (Brussel Sprout & Potato Frittata) in Food.

When you don't have much food on hand, and you don't have any money -- you go through your fridge and pantry and put together what you can.

I noticed we had (starting to go bad) brussel sprouts, potatoes, and plenty of eggs. So i threw that out there on Twitter, and a friend immediately responded with a "Brussel Sprout & Potato Frittata."

I found an easy recipe and threw this together in an hour.

Using the food processor, i shredded both the brussel sprouts and the potatoes. I threw them in a frying pan with coconut oil, salt, pepper, and thyme. I let them brown up and soften a bit. Then i tossed the mixture in a large glass baking pan.

Preheat the oven to 400 in the meantime.

I whisked a dozen eggs with some milk. I eyeballed it. I don't like to measure. Added a little more S&P (salt/pepper). I think i baked it for about a half hour, but i don't remember... i just keep an eye on it ;)

We ate it for dinner, and then again for breakfast the next morning. Liam LOVES it and will eat a ton. I also wrapped some up in a tortilla and had a "wrap." It keeps super well in the fridge for quick breakfast the next day.
