I actually have meals planned until the 30th but I won’t overload you.
My meal plan got a little messed up because I found these awesome Gyro kits at Wal-Mart so we ended up having those for dinner on Friday so everything is pushed back a day.
Sunday
Tacos with refried beans and sauteed peppers and onions using Pioneer Woman Beef Taco Filling.
We just finished up and it was amazing! Recipe because I can’t find it online, I found it in one of her cookbooks. I’ll leave some leftovers in the fridge for lunches and then I should be able to get three more meals out of it.
So usually, I just use ground beef throw some cumin, cayenne, salt and pepper, ect. But this was WAY better, it was a little bit on the spicy side so you could scale that back a bit. But it wasn’t too spicy - all three kids ate it with no issues.
4lbs ground beef
2x 10oz red enchilada sauce
2T chili powder
1t cayenne
1T cumin
2t garlic salt
2t salt
1T pepper
Cook your hamburger and drain the grease. Add in the enchilada sauce and spices. Then pour in 1 1/2c of water. (I’m realizing now I only used 1c, but it was fine.). Reduce heat and simmer. Mine simmered for quite awhile but minimum of 30 mins.
Monday
Homemade Pizza - Pepperoni and then a Hawiian pizza. I’ll have to have these made up before we leave for gymnastics, then Bobby can throw them in the oven.
Tuesday
Meatball Subs with roasted brown sugar butternut squash. (Using freezer meatballs I made up last month)
Wednesday
Pioneer Woman’s Italian Drip beef with sauteed green beans. We use the bottom recipe. Will have leftovers to freeze for another meal.
Thursday
Crockpot Sesame Honey Chicken with rice and broccoli (I posted this recipe last week, this is the meal that got bumped down a bit)
Friday
Fried catfish with chips and a veggie
Saturday
Chicken Fajitas with a veggie (Nothing special…I’ll pick up my basket that morning so hopefully some good veggies)
