My meal plan got a little screwed up with my getting sick, so I had a bit of adjusting to do.
Sunday
Sweet and sour meatballs, rice, and canned corn.
(I posted this link for those last week, but they were good! I also made up 5lbs of meatballs and froze the rest for dinners.)
Monday
Grilled pork chops, grilled eggplant, and pasta.
Tuesday
Sandwiches at therapy before soccer
Wednesday
Pork Fajitas using leftover pork from Monday
Thursday
Tortellini Italian Sausage Soup with Spinach (Freezing the leftovers)
Friday
Taco Nachos with sauteed peppers and onions (Using leftover taco meat from another meal)
Saturday
Grilled Chicken with rolls and green beans
Nothing super complicated this week, but we have a lot going on so I wanted to keep it fairly cheap and easy.
