This evening I made a risotto with mushrooms in the Instant Pot. It was amazingly good. I ate two portions and put four in the freezer. I can’t remember if Jake likes mushrooms or not. If he does, I will offer him a couple of portions from the freezer.
I want to make a risotto with shrimp but not immediately. I had never had risotto until I went to Italy a few years ago and the shrimp risotto was the first one I had and it was delicious. I think I have also seen a recipe for one with squash.
It rained quite a lot today. Not that it bothered me much because I didn’t go out.

I've never had risotto, but I buy the Knorr mushroom rice, so I'm sure I'd love the mushroom risotto.
