February 22, 2016 The End of the Day in February 2016

The day before yesterday {I think–it might have been yesterday!} I bought groceries and paid for them with my debit card. I have been somewhat careless about putting my card back in the place I keep it. Usually, at the store, I either put it into one of my pockets or drop it loose into my handbag. So, when I couldn’t see it in its usual slot in the wallet, I wasn’t particularly worried. This morning I looked in the pockets of the coats I wear at this time of year, I looked on my desk even to the point of picking paper piles up and moving them around and I tipped all the junk out of my purse. But it was still missing.

I went online and checked my account but there was no sign anyone except me had bought anything. So, I went to the credit union and cancelled it and I will get a new one in a week to ten days. This means I will have to change information for online for my phone and anything I buy from Amazon. It has also made me resolve to be more careful about where I put it after I use it. I have a separate-from-my money wallet for credit cards only. No more stuffing it into a pocket or dropping it loose into my purse. And when it does eventually turn up, I will shred it.

Well, I was going to make sweet and sour meatballs but when I took the bag of meatballs out of the freezer, I notice they were “Italian style” which means that they would not do well with sweet-and-sour sauce! So I put the meatballs in the pot with a small jar of salsa and a can of tomatoes. I then added two cans of water, the cans the tomatoes were in, into the mixture and cooked everything for five minutes under pressure. Of course, it actually took longer than five minutes because it took about fifteen minutes to come to pressure since the meatballs were all frozen. However, once the Instant Pot came to pressure, five minutes was perfect. I need to make a note that next time I need less water. The sauce is good but thin.

In the other IP, I did two cups of white rice and two cups of water using the “rice” button of the preset program. The rice came out perfectly. I had a plate full and there is still a lot of rice left to be mixed into the meatballs and sauce and frozen in bags for future meals. And I feel as though I will never be hungry again. I think I ate too much!

don't you just love being able to make enough to eat and still have enough to freeze for future meals? i know i do. but, i seem to make way too much for just me. gonna have to cut recipes in half or ask angela and kurt to come over to eat with me. take care,

I love making food ahead but I need a bigger freezer . Sorry about your debit card. I am way careless with mine too :-(

When and IF my oldest son gets all his venison out of my small deep freezer, I'll be making more of those freezer meals. They work out so great. I have meatloaf slices for sandwiches and soup frozen.
