rice and beans in keeping it postive

NOT what I would call “clean eating”, but inexpensive, easy, filling…

I only cook in the microwave… that might put some people off, but that’s the reality.

1 - boil in bag brown rice
2 - after it’s cooked, let it sit and absorb more water
3 - add - in layers basically - canned corn (small can), canned black beans (Goya makes small cans), onion, hot pepper flakes, cumin, canned diced tomatoes (found “chipotle flavor”)
4 - cook again for 3 minutes
5 - add diced cheddar type cheese (I use soy cheese)
6 - dish it out in small portions, mixing as I go
7 - reheat for 1 minute for each subsequent meal.

It’s spicy enough that I don’t want to over do it. Tasty enough that I love eating it for the next three or four small meals.

okay, it sounds good but, i don't want it so spicy. there are times i don't want to heat up the kitchen by actually cooking so, the microwave it is. great for heating up stuff. terrific for when i'm feeling lazy or not so good. take care,

it's barely spicy, but you could eliminate or cut back on the amount of red pepper flakes. I am not keep on very spicy foods. It took me from lunch on Monday through the afternoon and evening to breakfast this morning. I even added plain yogurt as a topping once - that worked well also.
