Ricks sister gave me a recipe back in July.... I finally made it this weekend and LOVE IT! I just warmed up leftovers! Mmmmm


Ok for those who wanted my Chicken Stir Fry recipe here it is. First I will post the 'original' and then I will post my modifications

4 servings, 1 2/3 c each (this came from Kraft food and family)

1/4 c Kraft Zesty Italian Dressing* 1 Tbsp. soy sauce* 2 cloves garlic, minced* 1 lb of ONE of the following: boneless skinless chicken breast, cut into strips or chunked boneless beef sirloin stead cut into strips or chunked boneless pork chops cut into strips or chunked 1 each: red, green and yellow pepper, chopped 2 green onions, sliced 1 Tbsp. oil 3 c cooked rice

Mix sauce ingredients (items with an * ). Add 1 Tbsp of the sauce mixture to meat; toss to coat. Let stand 5 min. Heat oil in large nonstick wok or skillet on medium-high heat. Add meat mixture and veggies; stir-fry 4 min or until meat is cooked through. Add remaining sauce mixture; simmer 2 min. Serve over the rice.

Now this is how we make it based of this recipe: I usually use 4 lb chicken chopped/chunked. 6 1/4 c (24 oz bottle) Kraft Zesty Italian Dressing^ (generic is ok but we didn't like the flavor difference) 13 Tbsp. soy sauce^ NO garlic 2 green, red and yellow peppers, chopped (I leave in big pieces so they don't get mushy) 1 sm container fresh cut mushrooms (you can cut yourself but this saves time) decent serving of fresh green beans (don't measure) decent serving of fresh sugar snap peas (don't measure) 2-3 med zuchinni cut into circles NO oil 6 c cooked rice

^You only really need 1/4 c dressing and 1 Tbsp soy sauce per lb of meat but we like extra to put over rice

Mix sauce ingredients (items with an * ). Add 4 Tbsp of sauce mixture to meat (1 Tbsp. per lb of meat); toss to coat. Usually mix this while I am cutting veggies but leave for at least 5 min before cooking. In a hot skillet/wok add all chicken mixture and stir-fry ~5-10 (I like to be sure it is mostly cooked before adding veggies). Add remaining sauce on top of chicken. Add all veggies to the top of the chicken/sauce mixture, DO NOT MIX, cover. Let steam until veggies are at desired tenderness. Serve over rice.

This is REALLY easy to make and DELICIOUS. You can basically do what ever you want as far as veggies. This a family favorite at my house. Any questions let me know.

I added fresh chopping garlic, red pepper flakes, broccoli and squash- basically any veggies would be good in it. I didn't follow the recipe to a T I mixed the sauce by eye and tasted.... I also added more soy sauce to the mixture as it was cooking!

Man I am out of rice & need more dressing or else I could make this again tomorrow!!

I don't think I have ever heard of italian dressing in stir fry. It sounds interesting.
