The third answer I got was from LittleMissMuddle:

OK I’ll admit it. I was just a little bit sneaky with this one. LittleMissMuddle earns boasting rights on this one as she was correct.
Cosmic was kind of correct as well. It is Chianti in the film. However in the book (end of chapter 3, p22-23 in my copy) Lecter, when asked if he would take part in the study replies:
“A cencus taker tried to quantify me once. I ate his liver with some fava beans and a big Amarone. Go back to school little Starling.”
Nice guy.
