Costco got tons of corned beef brisket in and we love it, went on allrecipes.com and got an excellent recipe for it, turned out to be the best I've ever made:

Prep Time: 15 Minutes Ready In: 6 Hours 30 Minutes Submitted By: mauigirl Cook Time: 6 Hours 15 Minutes Servings: 6 "Serve a tender corned beef brisket to your family for any special occasion or just because it's so tasty. The meat is slowly cooked in an oven for maximum flavor."

INGREDIENTS: - 1 (5 pound) flat-cut corned beef brisket - 1 tablespoon browning sauce (such as Kitchen Bouquet(R - )), or as desired - 1 tablespoon vegetable oil - 1 onion, sliced - 6 cloves garlic, sliced - 2 tablespoons water

DIRECTIONS: - 1. Preheat oven to 275 degrees F (135 degrees C). - 2. Discard any flavoring packet from corned beef. Brush brisket with browning sauce on both sides. Heat vegetable oil in a large skillet over medium-high heat and brown brisket on both sides in the hot oil, 5 to 8 minutes per side. - 3. Place brisket on a rack set in a roasting pan. Scatter onion and garlic slices over brisket and add water to roasting pan. Cover pan tightly with aluminum foil. - 4. Roast in the preheated oven until meat is tender, about 6 hours. ~ I didn't use the browning sauce, just rubbed it with a lot of freshly ground black pepper. I used the flavor packet and added more water than the recipe called for. Ours was 3 3/4 lbs., I cooked it for 5 hours. Wonderful and full of flavor, will never boil one again.
