.Rhonda's Loaded Potato Bacon Soup.
For my dicing I use the "Chopper" Can be found at Walmart, Target, or Bed, Bath, and Beyond.
Sidenote: My Mr. Vidalia Onion Chopper cracked so I saved the plates & lid... I was going to order another bottom online & never got around to doing so. I needed my chopper back today so I checked Walmart & found this one.....It's the SAME thing just a different name!! It was only $15.00 instead of the $20.00 w00t w00t!!!
Boil 6-9 Idaho diced potatoes
in large can of chicken broth
Once the potatoes are nearly cooked
1 med size yellow/white onion diced
3-4 carrots diced
1 rib of celery diced
1 bulb of garlic peeled/diced
I remove from heat and add the following ingredients
1 1/2-2 c sour cream
8oz brick of cream cheese
1 1/2 stick butter
1 lb Bacon crumbled or a couple bags/jars from the salad topping section
1 c whipping cream (I tasted mine tonight without this & it tasted just as good.... you really could omit if you wanted to save calories)
4-6 green onions sliced
Stir in shredded cheddar (I just eyeball this depending on my mood)
Once done you can eat right away OR you can let it rest & warm it back up later! (we do both but we enjoy the flavor after it sits)
Ladle into serving bowls & top with cheese, green onions, and bacon!
The above recipe was formed off of a recipe I was given by a friend. For those who follow me on FB you've probably already seen the comments but for those who do not I will say my friend Jamie commented on my photo "EWWW WHAT DID YOU DO TO IT!!! YOU RUINED IT!" LOL :)
My friend Jamie apparently always makes the following recipe for parties (31, Scentsy, etc) & everyone RANTS & RAVES about the soup.... I have never tried her soup so one day I had asked for her recipe.... Just reading the recipe it seemed "plain" in my honest opinion....
Here is her "precious" recipe LOL *(apparently I ruined her recipe) *
The ORIGINAL recipe:
6-8 potatoes cubed
4 c chicken broth after potatoes are cooked add
1 1/2 c sour cream
8oz cream cheese
1 stick butter
bacon I get the jars in the salad isle or bags usually use 2
1 c whipping cream
add cheese to top of each bowl and serve
*BUT *we all know soup is one of those recipes you can change as you prepare! && I LOVE my recipe! :) It's some of the rest dang soup around.
