Whole30, day 9 in Whole 30/post w30 eating

I’m feeling a LOT better this morning. No upset tummy, and I woke up hungry which hasn’t happened yet on the program. Hopefully this feeling will last through the day.

Right now I’m eating this:

Kale and zucchini sauteed in coconut oil and scrambled eggs, a Fuji apple, and some cashew butter. McNulty’s blackberry tea on the side. It’s actually really good. I think I’m starting to like cooked zucchini more than raw.

Lunch:

My phone is taking really blurry pictures today. Anyway, that’s a burger with avocado and sauteed zucchini, kale, and onion. Everything is topped with a little of the Zingy Ginger dressing. (I probably could’ve used some more veggies here, but it’s really just because I cooked the kale, right? Right?)

The ginger dressing is amazing! It’s got a slightly odd texture because of the ginger, but who cares? It’s SO good. I used apple cider vinegar, and that flavor is pretty strong. I wonder if rice vinegar would be less vinegar-y? It doesn’t bother me though. Plus it made a whole lot more than the avocado dressing. I was debating throwing some mayo in there to make it creamy, but I decided not to. If I’m bored tomorrow I might take a little bit of it and add mayo just to see what it tastes like creamy (and I’m pretty sure I need to use up the rest of my mayo relatively soon). This dressing will probably be the one I make for the rest of my W30 unless I find another interesting recipe.

Dinner!

That is some horribly overcooked chicken, broccoli slaw with zingy ginger dressing, and Golden Cauliflower Soup. Mine is on the orange side because I added an extra carrot.

I do not like this soup as much as the sweet potato, but I think the reasons are obvious. The sweet potato soup is sweet. I think I just need to figure out how I want to season the cauliflower soup.

I thought I’d take pictures of all three meals because I was actually excited about eating today. The veggie-fueled rage monster is in hiding, at least for a little bit. The omgmygrocerybillissoexpensive rage monster is not so quiet, but there’s a reason I didn’t do this when I was on a coffee shop budget!

They say most people quit on day 10 or 11, so I guess the next couple of days are the ones I need to fight through! Eep.
