What?! DAY 7 YOU SAY?! Almost done with week 1!!
Breakfast:
The last (thank god) of the frittata over spinach and diced tomatoes with a blood orange.
Still have a lingering headache and I’m tired because I didn’t sleep well due to headache. Makes me so totally not want to work today. I’m going to try to do as much as I can, but not kick myself if I have to finish a couple hours on Saturday. I really hate starting this late, though (it’s almost 9). Boo.
Lunch: Two eggs, broccoli slaw, and apple sauce.
Dinner: GIANT FAIL, but there’s more to the story. The last of the beef and assorted fruit. (notice the lack of veggies? Yeah, me too)
So, dinner. While it was overall a fail even while being compliant, it could’ve been worse considering the significant amount of time I spent contemplating a bag of reeses chips. I even put them in my room, fully planning on hiding in there after Callie got home, watching Criminal Minds, and eating the entire bag. If no one sees me, I didn’t cheat, right? :/ Anyway, eventually I put the bag away, but it didn’t result in my unbalanced dinner. I actually yelled to Callie while I was in the kitchen, I don’t want any fucking vegetables!!!! Veggie-fueled rage monster.
Day 8! Week 2! Holy crap!
I’m feeling a little better today. Still a little veggie-exhausted, but I also need to go to the store. I expect once I make another batch of soup, it will help. I also need to pick up some sweet potatoes. I was hoping to not use them as a crutch after week 1, but I think last night showed me that some potatoes might be good for my mental health.
I also wonder if part of the problem might have been that the diced tomatoes I had yesterday morning were a little off....maybe that one negative flavor was enough to undo me because it was the first time my veggies didn’t taste right and I didn’t finish them? Who knows.
Breakfast: Bell pepper and egg scramble with a blood orange.
I’m just going to finish and post this now because I’m not sure what will happen for dinner. Lunch was a big fat zero because I do NOT feel well. Blech. I didn’t even work today (yet…there’s still a chance I might convince myself to do something later so I don’t have 8 full hours to do this weekend). I did manage to make a shopping list and drag my ass to the store, though, so maybe I’ll at least be able to prep some food tonight. I just don’t feel like moving. Super blech. I’m not sure what it is…if it was breakfast, the extreme amount of pistachios I ate yesterday, or just what happens week 2 (the book said you might feel a little uggy week2). I’m hoping for a combination of the first two because I definitely don’t want to feel like this all week.
Meals to look forward to from my grocery shopping trip: Cauliflower soup, crockpot lime chicken, and a sweet potato breakfast hash. Also the ginger salad dressing. And possibly a baked egg avocado thing, though I’m not sure my avocados are big enough to pull it off. I was just happy they had some. This produce section is a nightmare....I actually think I had better pickings in Fairbanks. Plus they’re still out of the chicken apple sausage. Jerks.
Okay. I’m going to curl back up under my blanket and finish the Criminal Minds episode I was watching when I decided that if I didn’t go to the store right that second, it was never happening.
EDIT:
I figured I’d come and add on since I did manage to eat dinner. It wasn’t a completely rounded dinner, but I didn’t want to push my stomach with tough to digest veggies. So I had a few chicken strips with a baked sweet potato. A little after that when I was still feeling okay-ish, I had an apple with some of this amazing cashew butter that I ordered with my coconut aminos. I’m pretty sure this cashew butter is going to make me never want regular peanut butter again except for the fact that it’s outrageously priced. Why is all the healthy stuff outrageously priced?!
