Thanksgiving in Another Open Diary refugee

Haven’t really felt like writing in here lately… nothing to report. Thanksgiving was quiet. We didn’t have to spend it alone… we made it to church Sunday and they were taking signups for Thanksgiving lunch at the church. Apparantly they usually do it but this year there was some dithering over whether they wanted to, so it wasn’t announced until the last minute, and the turnout was lower than usual. About 50 people (the lady I was talking to says they usually have just over 100)… I took roasted vegetables so that we’d have at least one side dish John could eat besides the turkey, and I made a sugar free black forest pudding because I didn’t feel like messing around with trying to desugarise my traditional pumpkin cheesecake… felt kind of like cheating - all I had to ‘make’ was the crust, then I mixed up the pudding and layered it with sugar free cherry pie filling and I was done. Tasted delicious though, and there wasn’t enough left for us to bother to bring home, so it was a roaring success, probably because I wrote a little card that said SUGAR-FREE to put with it. I might as well not have bothered with the coolwhip though - I had to bring most of that home. I tossed the containers back in the freezer, so I hope they’re still okay.

My back was giving me fits yesterday and sending out major warning signals that said ‘do not dare to bend down to the oven or the floor again today’, and I was very gimpy in the afternoon/evening with the ‘you should really be using your walker’ness, but I didn’t want to be weak and get it out of the cupboard… but I’m okay now. That was the first day for awhile that it’s been mad at me like that, so it was probably a one-off.

Black Forest" pudding?. I've never heard of that.

Katren - you can't get any simpler. Packaged sugar free pudding mix made up with 1% milk (I always use 1%), and canned cherry pie filling! The crumb crust was just ground almond, a few packets of stevia, and a stick of melted butter. I made it up 24 hours before we needed it and let it sit in the fridge overnight uncovered, which firmed the top up a bit.
