With the October party a little over a month away I am already meal planning. It is going to be gluten free.
With the exception of a serious medical problem like celiac disease, there is no benefit to a Gluten free diet. However, I always like a challenge.
I love to cook and I will cook anything I can think of. I’ve never done gluten free before at least not intentionally so I’m taking this is an opportunity to test my culinary prowess.
My reasons are a little selfish too. I know what it’s like to feel segregated in some way from a group. To feel left out and unable to enjoy something like everyone else. I can’t expect people to know what it’s like to go to the mall without xanax so I can only imagine what it’s like to pass by a panini shop and not be able to go in.
I found a few that I really enjoy some are not gluten free but I will be making substitutions. The local Big Y not too far from me is one on the list with gluten-free sections. I am actually kind of excited.
Below are the recipes I found. I will be adding more to the menu as I go along and will update this post accordingly.
Gluten Free Pizza (Tomatoe and Basil)
Betty Crocker
1 1/3 c Bisquick gluten free mix
1/2 tsp Italian seasoning
1/2 c water
1/3 c oil
2 Eggs, beaten
1 c Toppings (cherry tomatoes halved, fresh basil leaves)
1 1/2 c Shredded Mozzarella
Preheat oven to 425 degrees. Grease a 12 inch pizza pan. Stir in mix, Italian seasoning, water, oil, and eggs until well combined. Spread in pan. Bake 15 minutes. Crust will crack a little. Spread pizza sauce. Add cheese and toppings. Bake 10 to 15 minutes longer.
- Cinnamon Crisps and Fruit Dip
Cinnamon and Sugar Tortilla Crisps
Gluten free tortillas
Cinnamon
Sugar
Spray bottle with water
Spray tortillas with water. Sprinkle with cinnamon and sugar. Cut tortillas into wedges. Bake in the oven at 425 degrees for 10 minutes.
Raspberry Applesauce (can be eaten alone or as a dip)
6 Apples, cored and cut into chunks. Leave peels.
10 oz fresh or frozen raspberries.
1 tsp lemon juice
1tbsp Honey
3/4 c water
Pinch of cinnamon
Bring all the ingredients to a boil in a large saucepan. reduce to a simmer and partially cover for 25-30 minutes. transfer to a blender or food processor. Puree until well combined. Chill in the refrigerator.
Candy Corn Vodka
Equal amounts of vodka and Brachs candy corn
Air tight container
Coffee filter
Clean glass bottle
In a tightly sealed container mix 1 part candy corn to 1 part vodka. Let sit for 4 hours. Strain chunks out. Store in a glass bottle and chill in fridge.

6 pk apple flavored beer

Bag of ice
Carve out the top of a pumpkin. Scrape out guts. With scrubber lightly clean outside and inside of pumpkin. Carve a hole just big enough to fit a tap at base of pumpkin. Apply honey to inside of hole to make a seal. Pop in tap. Decorate outside of pumpkin. To keep beer cold, prep keg the night before, wrap in a trash bag and store in a cooler filled with ice over night. Store beer in fridge until ready. When ready, carefully fill keg with beer and add a tsp of cinnamon. :)
