(no mama, there is no mention of litterboxes or feline bodily functions in this entry... - she thought my last entry about poor Tessie was too graphic. You can tell she doesn't have pets! lol) BTW, Tessie is apparantly feeling much better already - she's running around playing and being her normal pesky little self again. All we have to do is to get a pill into her every day and hopefully she'll stay that way! Now for the entry-proper...
Went to Walmart tonight for groceries... ugh I hate that store! But some of their prices are very good... alas, not the meat that John wanted me to get there - he was convinced it would be cheap but it was more expensive than Winn-Dixie. I got a pound of ground pork, a pound of Italian sausage, and a three-pound roll of ground beef which cost $4 a pound for the supposedly 'cheap' ground beef! Ack!!!!!! No wonder we don't eat much of the stuff... but John was begging for it. Apparantly eating low-carb has given him a yen for a homemade hamburger or two, and turkey burgers won't do.
I made a delicious low-carb breakfast hash today with grated cauliflower. Grating it by hand was pretty messy and took awhile, but the end result was yummy! It was supposed to turn into 'cauliflower and bacon biscuits' but it looked so good after the intial stage of cooking that I decided not to mess with the oven and I just left it as hash. Yum! I'll try the 'biscuits' another day. I've shared the link with everyone today because the recipe was so yummy with just a few tweaks of my own - I used fresh onion and garlic instead of powder, and added smoked paprika instead of a fresh pepper. I don't cook with fresh peppers - I don't really know how, and since John's allergic to various kinds, and drying removes a lot of the allergen he's sensitive to, dried is a lot safer... besides, I can never get too much smoked paprika. That stuff is delicious with a capital D Shame fresh cauliflower is so darned expensive... we're using a lot of the stuff now we're low-carb, and while frozen is cheaper, the fresh works better for some things. It'll be easier when I get my food processor next week. I can't wait! John said I can have one after he gets paid again... I've gone without for five years or so, since the food processer part of my dual blender/processer broke.
PS. Not only did I go to Walmart tonight, I didn't use the scooter, I pushed a shopping cart around the whole store! And then I came home and cleaned the litter box and took out the trash and recycling... and THEN I took a pain pill, but it was the first one I've had in a week. I'm starting to think that maybe potatoes were causing a lot of my pain... it's said that solanines (potatoes, tomatoes, eggplant) can be a cause of inflammation, and all I've really cut out of my diet are potatoes and rice. And rice is as hypo-allergenic as they come. I'm having more vegetables in general, and much more nuts and seeds (and eating a lot more eggs for breakfast than peanut butter sandwiches!). Either way, I'm feeling generally MUCH better than I was a month ago. Had a nasty sick headache this afternoon, but you can't be perfect all the time. Last night I ate a lean cuisine with some mashed potatoes in it... it was so nasty I only ate half and wondered why I was even bothering to do that. It's only been three weeks or so, but right now I don't miss rice, potatoes, or pasta one little bit. I'm still eating bread, and still having some sugar, just not as much as before... I looked at the lean cuisines in the store tonight because I was going to buy some more, and I didn't even want them! I'd rather eat the meat and vegetables I'm buying for John...
