Slow Down You Crazy Child in Roxy's Life

Sleep has been evading me as late. Until I need to wake up in the morning that is. Then all I want to do is sleep. Sometimes I blame the weighted blanket because it just can feel so darn comfortable under there. I love the cocoon feeling of a weighted blanket. Yawn This talk is making me need another coffee.

OK. Coffee made. Daylight Saving Time is still kicking my butt. Like, for real. It’s only an hour and I just cannot shake it. I ended up eating my dinner at 9 PM last night. I knew then that today was not gonna start up well for winning the match against DST. Roxy-0. DST-3.
Side note: It is Daylight Saving and not Savings, as most people say. It’s like the word sherbet. Everyone says “sherbert.”

Today is going to be a weird day. The amount of energy I have from my alcohol detox is pretty radical - it could be the coffee. I am on number 2. I am noticing more each day as to why I was self-medicating in this way. My brain is just all over the place. It pretty much resembles the three books, three tv shows, and seven art projects I’m in the middle of. My thoughts are even interrupting each other.

Food Time:

Dinner was so not even a mention last night except that I cooked my lemon-pepper shrimp perfectly. Even G was impressed. Saved the shells to go towards making shrimp stock! I usually make veggie broth with my veg scraps every week or two, so I’m excited to try making a stock with the shells once I get enough. Utilizing the freezer for storage of course! And then I jar the broths when complete so they can last. I have probably watched too many post-apocalyptic shows.

FACT: The main difference between broth and stock is that stock is always cooked with bones, but broth may or may not contain bones. Stock also has a longer cooking time and a thicker texture than broth.

That is how my Veggie broth differs. I always cook it like stock - for at least an hour, usually closer to three. There is also a seasoning difference between stock and broth, where one doesn’t use it, but I don’t recall that or if I am making it up. The wonderful thing about cooking is you can season how you want! Screw the rules! I usually add a little fennel seed, bay leaf, and marjoram to my broth.

Plant Life:

Things are coming alongish. I discovered a poor cactus that probably hadn’t been watered in months. I thought he was fake. Oops. Will try to revive him. Good thing he is a cactus. Most of him seems alive so some pruning may help… The thumb turns a little more brown
