How I Do? Bruschetta Pandita in Food Porn

Have I mentioned how much of a fan I am of one dish meals? I've been the biggest fan of my 9 x 13 baking pan lately that's for sure. Now when I say served the family of four with leftovers for me… just know that this included a couple of people going back for seconds as well.

Ingredients (Served my family of 4 - with leftovers for me for lunch the next day)

2 chicken breasts (cut into pieces)
¼ cup olive oil
¾ cup chicken stock
1 clove garlic (minced)
5 - 6 slices of bread - ripped to pieces! (rawr)
1 ½ cups sun dried tomatoes
1 tbsp poultry seasoning
black pepper, parmesan, and rosemary to taste
3 cups grated cheese of choice

Pre heat your most fabulous oven to 375F - because it's a great temperature.

In a large bowl, mix together the bread, olive oil, chicken stock, garlic, tomatoes, and poultry seasoning. If you want to use the rosemary, mix it in as well. Set the mixture aside for it to fully saturate.

In your 9 x 13 baking pan drizzle a little olive oil on the bottom, I mean why not right? Layer your chicken pieces evenly and season with black pepper, and dust with a generous helping of parmesan. Evenly (or not… it’s your dinner) distribute 1 cup of the grated cheese over the chicken.

Spread the bread mixture over top of the chicken, and top this with the remainder of the grated cheese. Bake this for about 30 - 35 minutes.

Chef Panda’s Notes

I wanted to add black olives to this, but I wasn't sure how well that would go over with the entire family (turns out I was right on this decision), but if I make it for people that I know like olives, I will add them. I feel like it would add good, balanced flavour.

If you don't want to (or don't have time) to rip up the bread, use a box of stuffing mix, but don't use the stuffing seasoning.

If you don't want to use sun dried tomatoes, a can of diced regular tomatoes should work just as well.
