Crispy Tortilla-Crusted Tilapia in Recipes and the kiddo reviews

so I haven't logged in on here for a few days.....made this recipe at the end of last week.....it was good, but probably not something I would make on a regular basis. I had fish, so I made it lol.... I only made a slight change, because I used what I had on hand, instead of running to the store... I'll note the changes .... this is from Paula Deen's Southern cooking bible.

  • 1 cup crushed tortilla chips
  • 4 tablespoons (1/2 stick) butter, melted
  • 2 teaspoons finely grated lime zest
  • 1/2 teaspoon dried basil
  • 4 skinless tilapia fillets (4 ounces each)
  • 1 teaspoon Paula Deen's House Seasoning (page 435) (1 cup salt, 1/4 cup ground black pepper, 1/4 cup garlic powder....combine and store in airtight container for up to 6 months)
  1. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with foil.
  2. In a medium bowl, combine the crushed chips, melted butter, lime zest, and basil. (I used 2 teaspoons lemon juice in place of the lime zest)
  3. Place the fish on the prepared baking sheet and season with the house seasoning. (I just sprinkled a bit of salt, garlic powder and pepper over the fish, instead of mixing up the seasoning) Bake until the fish is opaque and just cooked through and the tortilla crumbs are golden around the edges, 12 to 15 minutes. (I cooked mine a bit longer, like maybe 5 minutes)

Over all it wasn't bad.... I eat fish when I'm in the mood for it, so that is why I said earlier that I probably wouldn't make it on a regular basis. I liked the tortilla crust, so much so that I think it needed to be on both the top and bottom of the fish. I don't really think there is much you could do to tweek this recipe, other than what I did with the lemon juice instead of the lime zest. I didn't test it out on the kids, mainly because most of them don't eat fish sticks, so I didn't want to force fish on them lol. My mom said it looked gross and I got a "what is that" from my brother with the look that said "it better not be my dinner" lol.... but they really don' t eat fish either!

I didn't make anything out of the book the past few days. I'm looking for something to do with this pork I have in the fridge....so maybe tomorrow I will have another recipe to review hehehe.....
