Today I ate Chipotle again (this is going to be a trend, I think) for lunch. I worked until nine, so by the time I got home I wasn't in the mood to go to the grocery store and I didn't have much in the way of vegan-y food, so I had saltines and peanut butter. Not much of a meal.
I need to find the time to go shopping and buy things I can actually eat. I foresee a lot of beans in my near future.
I can't say I have noticed any kind of difference in the way I feel, other than the constant lack of fullness. I'm not hungry all day, but I'm certainly getting hungrier sooner. I probably need to up my protein intake and fiber. Right now I'm just eating whatever I can find that fits into the definition of vegan. That won't sustain me for very long.
