I'm at the office and I'm writing an entry...stop me if you've heard it...

Yesterday afternoon flew by and before I knew it, was time to head out for the gym. Did the rowing circuit class with two of my colleagues and felt surprisingly strong during class after feeling tired/sore most of the day. Showered at the gym but it was raining so did not blow-dry. The weather had turned and I was pretty cold in just a shift dress and bare legs, so I hurried home!

Arrived home to find a bunch of big packages from online shopping. I went through everything and again, pretty much nothing fit. I was especially sad about a few Zara blazers I'd ordered, I tried them on but they were way too short and looked ridiculous. On the bright side I finally found a good pair of tall flat boots! I have seriously been looking for a replacement for my old ones for two years and just got rid of the old pair in my last clean out because they were looking so shabby. I was this.close to buying the overly pricey Stuart Weitzman 50/50's but bought these online from ASOS on a whim, hoping that they'd be high enough and not look weird. And they were! They fit close to the leg, the leather is nice and smooth and hits just at the bottom of my knee. I like them even better than the 50/50's, plus they were on great sale, plus a 20% off coupon code, so I am thrilled.

Packed up the rest of my online shopping bulimia to go back, then had to jump on a conference call with Hong Kong. A held off on starting dinner until I was done, and after that we had delicious tilapia "tacos" wrapped in romaine lettuce leaves with avocado. So tasty. After that I washed dishes, made tea, and we had shared the last three macaroons (not macarons) - they were just as delicious the second day. I did some work, puttered around, and got ready for bed. Randomly decided to curl my hair with curling wand since it dried a little wonky and my flat-iron died on me. (Waiting for the new one to come in the mail currently!) After that I went to bed. I got up around 1am to pee, and thought I was hallucinating at the sound of something crispy-sounding falling on the skylight in our bathroom.

Woke up this morning and realized no, it was snow. Got up, packed my workout stuff, then washed up, drank some green tea, and made an egg and apple for breakfast (no double yolk today.) My hair was somehow still nicely curled which was great, so I got dressed, put on sunscreen and black dress, black tights, black-on-black studded flats.

Packed up my lunch and snacks, put on my coat and headed out to see more snow. Crazy stuff. I was ravenous by 10:30am so I ate an almond, dark chocolate and sea salt Kind bar that I had in my deck - I think I do need that second egg in the morning. Lunch was the second tupperware of chicken/brussels sprouts/butternut squash and I am about to go get that leftover tilapia filet for snack.

After work today I would like to work out, return stuff at Zara/Uniqlo, and get groceries.

Anyone have good ideas for five-ingredients-or-less meals?

A go-to for C and I is salmon marinated in teriyaki sauce, rice (white for him, brown for me), and asparagus. Just bake the salmon at 375* for about 15-20 mins and done... super easy!

Quinoa with roasted brussel sprouts, add some cherry tomatoes, shredded cheddar cheese and a bit of Braggs Healthy Vinegarette, and voila! One of my favorite go-to meals!

I'm also on a sourdough toast smeared with smashed avocado and salt and pepper kick right now too.

I have a killer (easy!) gazpacho recipe that I can get to you too. Another one of my favs.

I'll keep adding more meal ideas as I think of them; I could talk about food for all the live-long day.

Ps. I've been eyeing those 50/50's for months... Have been so close to pulling the trigger many times, but just haven't yet.

I had a large pile of spinach with a kipper and an egg last night, comfort food.

Also into ratatouille (eggplant, zucchini, pepper, tomatoes, garlic) and Kale/Bean soup (onion, carrot, celery, navy beans, kale....well, and rosemary/bayleaf/chicken stock so technically not five ingredients)

Also - slow cooker pork if you have a slow cooker. Literally just the pork roast (shoulder is delicious) on a bed of onion with a little water and seasoning slow cooked. So easy and so so so good.

Lightly brush chicken breasts with extra virgin olive oil, season to taste (I use seasoned salt and pepper as this is what J prefers), and bake for 30 mins at 375 (if bone-in breasts, give it another 10-15 mins, if this is dark meat chicken, I like to make it about 45 mins.) Quinoa and oven-roasted broccoli florets for the side.

Soba noodles, chickpeas, fried tofu, some kind of veggie (I like sunflower sprouts or something else green) with fresh cilantro and this sauce on top (although I usually throw in some ginger and/or fresh turmeric root too for good measure):

I know it's not technically five ingredients or less since you have to make the sauce, but the sauce is stupid easy/quick to make and I usually double it so I have it on hand for a quick bowl meal any time. The variations on this theme are pretty endless. As long as you have a yummy sauce like this one, you can't go wrong.

  1. Corn tortillas, canned black beans sauteed with some cumin/smoked paprika/chili powder (whatever Mexican spices you have), avocado, red cabbage, hot sauce. Soft tacos.

  2. Salmon, spaghetti squash, and roasted cherry tomatoes. Cook the spag squash (split, seeds removed, face down) for 40 minutes at 375. Put a layer of Dijon (flavoured if you have it) on the salmon, bake for 20 minutes. Toss the cherry tomatoes with oil and crushed garlic, put them in with the salmon for 10-15 minutes (they should be wrinkly or starting to split). Make a bed of squash (with oil or garlic or butter or whatever you like--I prefer pesto, toss the cherry tomatoes on top, parmesan cheese over the whole thing if you have it, salmon on the side).

  3. Mix canned chickpeas with mayo, chopped celery, onion, and pickles. Mash it up a bit. Spread on toast like tuna salad.

You always seem to eat a lot healthier than me, but one of my favorite meals to make is pizza casserole. Basically macaroni with spaghetti sauce and some kind of ground meat (I use Italian sausage) and whatever veggies I have on hand, covered in cheese and baked at 350 for about 25 minutes. I might make it tonight actually.

ryn: Thank you so much! I am still sick but definitely doing better on this herbal protocol. I think I have about a year more to go to get as much of this out of my system that I can as long as there are no more unforeseen setbacks. I stop the IVIG at the end of May so that may mean all the horrible pain comes back... Fingers crossed I'm more than halfway there towards being as functional as I am going to be. I'm just really trying to hustle workwise while I can bc I never know when I'm be incapacitated again..

The 50/50s are nice! I saw a lot of similar knee high boots last season, I think Office had quite a few styles. Not sure if you guys have that brand in the US? I think they have a shop on eBay. Wow, snowing in April. That's unusual! I was in NY a few years ago at Easter weekend and it was warmer than London.
