What tweak to a common dish do you make?

What do I not tweak when I’m cooking? No, I’m serious. If I’m cooking, I’ll add a ton of stuff to whatever it is I’m making.

I read the recipe, and start out fine. Then I taste it and it just snowballs from there. Like…
A friend’s son, who is trying to lose weight (and doing a damn good job of it) was making cabbage soup. He sent me the recipe, and I was like “ok, cool. I’ll go get the ingredients.”

Bought the cabbage, onions, bell peppers. It called for whole or stewed tomatoes, but I don’t like how they sometimes don’t break down and you have these huge stringy pieces of tomato, so I opted for diced. Used beef stock instead of water and bullion, added a ton more garlic than it called for.

Tasted it, and it was bland. Of course it was! It’s feckin’ cabbage soup! Went to the fridge and pulled out three different hot sauces and gave them all a bit of a taste. One didn’t have hardly any heat at all, One had omg burn your eyelids off heat, and the other had a kind of sweet heat that sneaks up on ya. So a couple of dashes of melting eyelids went in, and a pretty big glop of the sweet heat stuff.

It tasted sooo much better.

I still have some if anyone wants to come over.

Anyone? Please? I can’t eat it all by myself lol

I tend to add lots of spices & such, too. Sometimes change things completely

I tweak everything from baking to cooking! I'm pretty sure I've fried my taste buds because I love spicy-hot foods. So I usually tend to add way more spice to whatever any dish calls for. I'll almost always add onions and green peppers to anything if I've got it, too. I've amped up my baked mac and cheese game by adding diced hot dogs, "mexicorn", and a bread crumb crust/topping. I guess what I'm saying is that I never have a recipe! lol Well, unless I'm making something specific that I know I tend to have a little trouble with in general. For example, I have trouble making gravy. I always, ALWAYS get the quantities of liquid to flour or corn starch wrong and it turns into a gross paste. So I tend to use a simple recipe for that and then just add spices to taste.

lol my dad always said the trick to his gravy was the pan he used. When I moved out, he gave me the pan. I wish I still had the damn thing. I have no clue what happened to it, but I never did screw up any kind of gravy or cheese sauce lol

lol I feel like gravy and cheese sauce are the two EASIEST things in the entire world to make, and I can't do it. Now I wish I had your dad's magic pan! I just tried to make mac and cheese in a pot on the stove a couple weeks ago and even after following the directions exactly, it still turned out more like noodles in a thin broth, more like a soup. I could NOT get this stupid sauce to thicken no matter what I did. And as I said in my other note, my gravy is usually a thick gooey wallpaper paste. lol I can't win to save my life there. But give me anything else and I'm pretty good at it!

I typically follow the recipe to the letter the first time around. Then I tweak it up the 2nd. :)

Yep. I do that every once in a while. The only recipes I actually follow are the ones from Hello Fresh. :)
