Cauliflower Pizza Crust Recipe in Day to day life from a woman that turned 60 in Oct 2014 and who lives on a farm and Retired on January 2, 2016. I plan to do more sewing, work outside in the yard and just enjoy my retirement.

Cauliflower Pizza Crust

½-1 head cauliflower or 1 pkg of frozen riced cauliflower-5 grams of carbohydrates per 1 cup
½ cup shredded Italian cheese blend or
¼ cup parmesan cheese
½ cup mozzarella cheese
¼ cup chopped fresh parsley or
1 T dried parsley or to taste
½ t dried basil
½ t crushed basil
½ t oregano
1 t chopped garlic or ½ t garlic powder
1 egg
Salt and pepper to taste

Directions

  1. Use food processor, electric chopper or chop into small pieces but the smaller (riced is best) the better for the Cauliflower.
    If frozen, thaw and let drain in wire mesh strainer or strainer with drain holes small enough to keep the riced cauliflower from draining through

Place a steamer insert into a sauce pan (I used the metal strainer) and fill with water to just below the bottom of the steamer. Bring water to a boil and add cauliflower. Cover and steam until tender (about 15 minutes). (I didn’t cover since the wire strainer wouldn’t allow but I stirred in from the bottom up to insure it all was cooked-I let my water get to almost boiling)

I then took the riced cauliflower out of the hot water and let it drain for a minute and then put the strainer with the cooked cauliflower back on the pan and set in the refrigerator for 15-20 minutes.

While your cauliflower is in the fridge, pre-heat your oven to 450 degrees F.

Line Pizza pan or baking sheet with parchment paper or silicon mat.

Take cooled cauliflower out of fridge and I use wadded up paper towels to get as much moisture out of the cauliflower as I can. I also use a flat bottom drinking glass to press the cauliflower to get as moisture out of the cauliflower and then use the paper towels. Once you are satisfied that you’ve gotten as much moisture as you can or run out of paper towels (one recipe said to use a dishtowel, but it stuck to my dishtowel and didn’t the paper towels), put the riced cauliflower into a bowl.

Stir in your cheeses, egg, and the spices you used and incorporate evenly. Pour mixture into the prepared pizza or baking pan and press out as evenly as possible.

Bake in the pre-heated 450-degree F oven until lightly brown (about 15 minutes)

Add pizza sauce and toppings preferred and bake for 5-10 minutes or until cheese is melted

Simple Pizza sauce Recipe
1 small can tomato sauce
1-2 t dried oregano
Parmesan cheese if desired

** If you have the trick to making this crust a little crunchy please share. This crust tastes excellent to us, but I’d prefer a little crunch to it other than the edges.

I'm following a low carb diet and this would be wonderful. I wonder if spritzing it with a bit of olive oil before the first bake would crisp it up a bit?

Could you put the crust under the broiler for a few minutes after you bake it? That might crisp it.

This recipe says to bake for 40 minutes but it also has a bit of flour and baking powder in it.

This one says to bake for 35-40 minutes and there is not flour in it so maybe just baking a bit longer will help but it is also a bit lower temp.
