I found this recipe in a cookbook.
1 cup butter or margarine
1 cup sifted confectioner’s sugar
1/2 teaspoon salt
1/4 cup applesauce
1 tablespoon vanilla extract
2 and 1/2 cups sifted all-purpose flour
1/2 cup sugar
1 and 1/2 teaspoons cinnamon
Cream butter in mixing bowl. Gradually add confectioner's sugar and salt; continue creaming until light and fluffy. Add applesauce and vanilla extract. Blend in flour gradually; mix thoroughly. Shape into balls, using 1 teaspoon for each. Place on ungreased cookie sheets. Flatten balls to 1/8 to 1/4 inch thickness with bottom of a glass dipped in sugar. Bake at 325 degrees F. for 12 to 15 minutes. Do not brown. Combine sugar and cinnamon. Roll warm cookies in mixture.
I am going to try the above recipe. They sound very good. :)
