70 Degrees and Sunny in Staying Connected

Hello! I’m just here to write about another mostly positive day =)

I decided earlier this week that Sundays will be my husband’s “day off” from 6am toddler duty. So, last night I made sure to go to bed as early as possible, which turned out to be about 9:30pm. On a strike of luck, my daughter slept in until 6:45am, which was great. I was ready for her, and my husband was able to sleep in as long as he wanted, which turned out to be until 8am.

Next, I took my daughter with me to the grocery store while my husband stayed home and got some long overdue alone time. We left around 10am, and by the time we got home around 11:30am, my husband was in the best spirits I’ve seen him in for weeks. This makes everybody in our family happy. Hooray!

For the past several weeks, my dinners have consisted of things like toast, cold cereal, microwave burritos, and tater tots. Since my appetite is starting to return, we decided to try something different this week. I’m currently making a large batch of “restaurant style” black beans, which just means I sautéed some onions and garlic and heated those up with the beans and some cumin. Later this evening I’m going to make a whole bunch of brown rice and quinoa, and my husband is going to make a couple pounds of chicken breast. We’re going to try doing the whole “meal prep” thing, chicken bowl style!

While fruit has been quite appealing to me for the past week or so (blackberries, raspberries, cuties, apples, bananas, avocados…) vegetables still sound pretty… unpleasant. But I’m hoping I can work something into my palate other than potatoes. Maybe bell peppers or broccoli, old favorites. I’ll see how I’m feeling next week.

Once my daughter wakes up from her nap, I think we’re planning on going for a nice family stroll through someone else’s neighborhood. It’s a perfect, 70 degree, sunny day in Southern California. Then, when we get back, my husband and I talked about doing a big clothing purge. This might make me nerdy, but I already feel excited by the thought of it alone!

Well, I better go check on my black beans!
