Stuffed Baked Potato in Our Dinner Menu

2 russel potatos
3/4 cup frozen sweet corn
1/2 can black beans
3/4 cup salsa
2 garlic cloves
Shredded Mexican cheese blend
Sour cream

We stab our potatoes with a fork a few times and toss them in the microwave for about 6 minutes on each side. While that’s going on, we get a large pan and put the corn, beans, salsa, and garlic on there. We just heat it up on medium heat. Once the potatoes are done, you cut them down the middle and pour the corn-bean-salsa mixture into the opening. Generously sprinkle cheese and sour cream on the top, and voila!
