Serving size: 1 chicken breast, 1 cup green beans
We defrost our chicken in the fridge at the beginning of the week. Once it’s defrosted, we will usually separate the chicken we want for this recipe (for us, it’s two breasts) and put it in a tupperware with marinade for another day or two. I have no idea if this changes anything since the marinade says “15 minute marinade” right on the label, but we are just slow and unorganized. Marinading it ahead of time means we won’t forget to do so on the day we plan to eat it.
I believe my husband cooks it at 425 degrees for 25-28 minutes. He will take the internal temperature of the chicken to make sure it’s done since each breast is slightly different in size.
As for the green beans, we buy them fresh, chop off the ends, and throw them on the stovetop with a little water, olive oil, and about a tablespoon of butter. We like to sprinkle some garlic powder, salt, and pepper on them, and then we just let them simmer while the chicken cooks. This way they get nice and soft.
