6 cups chicken broth
3 cups cooked chicken breast, diced
2 cans great northern beans
2 cups salsa verde
1 teaspoon cumin
10 large brussel sprouts
garlic powder, salt, and pepper
This is a recipe I found online. You throw the chicken broth, chicken, beans, salsa verde, and cumin all together in a pot and bring it to a boil. I like to let it boil while the brussel sprouts are in the oven so the chicken gets nice, soft, and juicy.
Secret: Crushed tortilla chips on top of this chicken chili is a very satisfying addition.
If I’m being totally honest, I have not mastered the brussel sprouts yet. They drive me nuts, because I’ve had good brussel sprouts before… but not at home. The ones in this picture were too chewy for me. They were cooked at 400 degrees for 30 minutes. I plan to continue experimenting. Next time I will probably try using a higher quantity of smaller brussel sprouts to see if that helps. In conclusion, brussel sprouts exempt…
